For at least a year now, rainbow cakes have been all over the internet. I finally decided to make one. I put aside any sugar and food dye policing for a day to build a rainbow cake to top off what seems like a month of birthday festivities. It was easier to make than it looks. It was actually kind of fun separating the batter to make the colours and letting the boys get involved. The cake was loosely based on this one, the icing was pretty much this one, and the filling between the layers was this with a little whipped cream added in. My sugar sensitive boy loved that it wasn’t too sweet. Thankfully no one was hurt in the making or eating of this crazy cake!
