sweet solstice

:: The first of the summer berries from the market. Especially tasty since I was on my own with the boys without a fuss. Lots of smiles, swings, apple chips and honey sticks enjoyed by all.

:: Just the right soup for my depleted nursing, sleep challenged body. Lots of bok choy, tofu and nourishing broth.

:: Finishing up the swap package to send off to my partner next week.

:: Looking forward to some popcorn made the old-fashioned way and a classic with my oh-so-patient sweetie who knows how to apply the rescue remedy just at the right time.

  2. In case you don’t check my blog for it, here’s the recipe for the watermelon salad!

    INGREDIENTS

    * 3/4 cup halved, thinly sliced red onion
    * 1 tablespoon fresh lime juice
    * 1 1/2 quarts seeded, cubed watermelon
    * 3/4 cup crumbled feta cheese
    * 1/2 cup pitted black olive halves (kalamata would be even better!)
    * 1 cup chopped fresh mint
    * 2 tablespoons olive oil

    DIRECTIONS

    1. Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
    2. In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend
